For the next 3 months, I will make a vegetarian meal once a week wherever I am. At each new place I will read Choices for Sustainable Living’s chapter on food sustainability and open a discussion around how we can make more conscious food choices. This will not only cut down on one meal per week that would have otherwise been meat based in my diet, but it will do the same for the family and friends I’m feeding. Eating a vegetarian meal has both environmental and health benefits. It will show my family and friends that this is something I care about, and that there are delicious alternatives to eating a dinner that isn’t based on a meat diet. Reading Choices for Sustainable Living will open their eyes to food sustainability issues they may not know about, and encourage them to make more conscious decisions on what food they buy and eat.
