Gordon Liu is the Marketing and Operations Manager at CELL.

As the newest member of the CELL team, there is still much that I am learning about the world of sustainability. While I have never been anti-Earth, I must admit I have also never been a die-hard eco-warrior. I recycle regularly and I love my travel mugs. However, I also rely heavily on my non-hybrid car and I am wired to almost a dozen electronic devices. If a truly passionate environmentalist is a deep, majestic green (think Forest Green), then I would be more of a Yellow-Green or a Granny Smith Apple shade.

So, in an effort to live more sustainably, my first goal is to give Meatless March a try. As someone who loves a medium-rare cheeseburger (especially a Juicy Lucy), this may be quite a significant challenge for me*. So far today, I’ve had a couple of slices of cinnamon-raisin toast with peanut butter. Not a bad start.

For now, I bid you adieu. I am off to hunt for a grilled cheese sandwich.

Okay, so I’ve cheated a bit. I just spent two weeks as a pescetarian in order to ease my transition to the strict vegetarian diet. Full disclosure: this transition was actually not as difficult as I would have expected. I did forget once, and ordered a sausage pizza. This led to five minutes of picking sausage off my pizza, which in hindsight, is not all that sustainable. Sorry.
